Haha! Um... well, I just went to look it up, you need to have a Beast Master with the skill Train equipped. You have to reduce them to under 10% of their HP and then just use it until it works, and they'll eventually join you.

Keep in mind that octupi aren't very good unless they're sitting in water-tiles.
