Bill basically lied to Sookie about everything he is.
He was sent there to collect her for the queen and he never told her.
Until Eric had to tell her, and Bill tried to Kill Eric and Pam. To try and prevent Sookie from knowing it. and so he can have her for himself.
He basically wanted to control her, and manipulate her. The whole time, he tried to make Eric the bad guy. Bill never took any of the responsibility.

I just defeated clem in battle!
oh wow I totally missed all that was that in the first 3 seasons? or the fourth?

That was near the ending of the 3rd season. You haven't really watched the 4th. There are only 5 episodes available for the 4th.

I think she should have listened to her gran

Her gran only warned her about the Temporary-ness of his situation.
She doesn't know anything about Eric. She just knows that Eric has amnesia.

When her gran was talking to Sookie though the witch she warned her now to give her heart away.

I know. But she only said that because he has Amnesia "it's temporary" is what she said. But her gran doesn't know that Eric is actually good.
