Apparently it's a mix of rice wine, chicken broth, sugar and salt. And the chicken is rolled into aluminum foil, steamed and then marinated afterwards.

Huh, okay then. Yeah, forgot about the sugar. Not sure chicken broth is needed — don’t remember my mom ever using that.

There may be several variations of the recipe *shrugs*
I first had to weed out all tons that wanted me to soak the chicken in beer instead. Or shove a beer can up its butt.

lol I'd call the run-over-chicken "Roadkilled Chicken", but that's because I'm weird and have a morbid sense of humor at times.

I've eaten Chicken Under A Brick before... which was just a regular chicken that they had taken the spine out of and squished flat with a brick then baked. They served it with the brick still on top though... which was weird.
