I can't eat chicken as I'm a vegetarian but I love that you guys have tried different and unique variations of it and seem to enjoy it!!

Was there a special reason for the brick (as in, the added weight gives it a different texture, or the stone distributes heat evenly, or whatever)? Or just a novely gag to set the restaurant apart from others?

There is sopmething called 'rock soup' so why not 'brick on a chicken'

Supposedly it weighted down the chicken so it had more contact with the pan and made the skin crispier or something. I don't remember. There was supposedly a reason though.

Yeah. It helps make the skin crispier, because it causes more of the chicken skin to be in contact with the pan.

It also reminds the diner what will happen to them if they can't pay the bill.
