With them being that large, I wonder what it would be like to bite into one. I guess you wouldn't be able to boil them.

You can hard-boil an ostrich egg but it usually takes almost two hours to do it. I had a friend growing up that raised ostriches and we made a HUGE deviled egg once.

Did it taste different than chicken eggs? Actually, I wonder what turkey eggs taste like.

I imagine a giant fish egg would disintegrate when boiling.

How they taste depends on what the bird eats, but to be honest other than size and color there isn't a huge difference between ostrich and chicken eggs. They taste almost identical. If you had them scrambled you probably wouldn't even realize.

Turkey eggs have a higher yolk to white ratio than chicken ones apparently, so they taste similar but are good for custards and creamier dishes according to an article I found.

Yeah, fish eggs don't do well cooking from what I understand.
