*nod* If you get the good homemade stuff, it's really good run through an ice cream maker.

Oooooo! You're right! That's the main ingredient. And LEMON MERINGUE PIE uses the whole eggs.

SparX 04-14-2016 02:07 AM

YAAAAAS
Lemon Meringue is amazing

Awen Moonshine 04-14-2016 04:07 AM

I think my favourite things made with egg are Tamago (Japanese sweet omelette), Souffle (chocolate souffle is to die for when made properly) and because I've just seen it mentioned, Lemon Meringue <3 But I just generally love egg anyway <3

Ammutseba 04-14-2016 07:25 AM

Pffff. If you can count things that include egg whites, then divinity is totally my favorite egg food.

Well. Would have been, if I could still enjoy sweets like that.

Or hey, ice cream has eggs, right? Egg yolk, at least.

More seriously, I don't think I have a favorite egg dish, but I do like making eggs in many different ways. There's a sort of dessert I get as sushi places sometimes: quail yolk on tobiko. I make eggs for my ramen, sometimes, or mix eggs into rice. Make egg flower soup... also omelettes. I have many, many different recipes for omelettes. My wife likes a particular way I make scrambled eggs.

Years ago, I eschewed boiling eggs in favor of baking them. The results are much easier to control, as long as I'm using "extra large" chicken eggs. I don't get why people call them that. I grew up on a poultry farm, and those were certainly not the largest eggs we gathered. Breed does matter a lot, though. As much as you'd guess, and then some. Most polish chickens, for instance (named not for a country of origin, but the near pole shape of their heads, which results in their unique crowning plumage), tend to have smaller, longer eggs than more common breeds, whereas the australorps we raised had larger, rounder eggs. I am rambling. Sorry.

I can appreciate duck eggs for a creamier texture, and have developed methods for ensuring my egg dishes come out to the desired creaminess of my guests, although I prefer most dishes with firmer eggs.

But... favorite egg dish? I don't think I could have such a thing.

pollik20 04-14-2016 07:47 AM

Ohhh~ My favorite is the "Leche Flan"

It's a Filipino dessert made of egg yolks. I personally make them and eat them :D

It's a sweet egg pudding with caramel on top.

*craves for Leche Flan*
*cooks Leche Flan*

Awen Moonshine 04-14-2016 08:24 AM

Oh and I LOVE any form of custard <3 My favourite custard is patisserie custard <3 It's so sweet and firm <3 So tasty <3

Tam I am 04-14-2016 02:11 PM

*reads the very interesting paragraph on egg talk* XD Have you ever collected eggs from young broiler hens who are just starting to lay? My family got one with THREE YOLKS once.

littl3chocobo 04-14-2016 03:01 PM

wow, the things you learn? XD i dd not know any of this stuff, hahaha

Tam I am 04-14-2016 03:21 PM

Can anyone imagine an ostrich egg, spun into a golden egg, injected with tasty spices and roasted, then served for the roast at dinner?

Fontaine 04-14-2016 03:38 PM

I always liked 'em scrambled.

Tam I am 04-14-2016 05:06 PM

Ostrich eggs?

SparX 04-14-2016 05:29 PM

Easy fried over hashbrowns is the only acceptable way for runny yolk in my opinion.
also When you put the egg inside a piece of toast that's amazing =O

Tam I am 04-14-2016 07:14 PM

LOL I still think that mashed to puree soft cooked eggs make great pancake and toast spread.

Den 04-14-2016 07:17 PM

...Now I wanna make inside-out eggs.

Tam I am 04-14-2016 07:19 PM

Remind me what that is?

Den 04-14-2016 07:20 PM

An egg that gets spun around with enough force that the white and yolk invert themselves, resulting in the yolk on the outside, and the white inside.

ml1201 04-14-2016 08:25 PM

semi-soft poached eggs on a wheat beagle with cheese and a slice of ham steak. I like my poached eggs a little runny but still hardish when cooked. All that yummy, gooey egg goodness. *is in bliss* Too bad I'm too lazy in the morning to make it. .-. Maybe once my classes are over for the semester I might make some on my days off.

littl3chocobo 04-14-2016 09:42 PM

ml; that sounds more like a lunch than a breakfast XD

Den 04-14-2016 09:50 PM

poached eggs are good on toast, or mixed into cooked oatmeal or rice... And now I wanna make that to eat.

littl3chocobo 04-14-2016 09:53 PM

i like to drop egg into soups or fry it in meat fat XD

Fried in bacon fat. If not for the fact that I worry about grease splatters, I'd make eggs like that...

littl3chocobo 04-14-2016 10:03 PM

is that -your- opinion or is the little fishy whispering things again?

LOL No. That's a country breakfast. And I would like it made with beef and without the bread.

littl3chocobo 04-15-2016 01:59 AM

well, in the country you have one hell of a first meal XD

Tam I am 04-15-2016 02:15 AM

Need it, if you're going to cut firewood or get the garden ready or stack square haybales. LOL

littl3chocobo 04-15-2016 02:17 AM

this is totally fair XD

so it is late but i am still awake

ZenKitty 04-15-2016 08:20 AM

I love egg casseroles - egg, cheese, milk, mushrooms, scallions, and maybe a little red pepper all mixed up and baked in the oven. It's quick and easy and feeds a whole bunch of people.

Panda 04-15-2016 11:46 AM

I like salted steamed eggs smashed to perfection inside a bowl.

ZenKitty 04-15-2016 12:34 PM

Egg Frittatas are really tasty too.

littl3chocobo 04-15-2016 01:37 PM

so, i need to get some eggs from the store XD we are out

Reminds me a little of my grandma's quiche. Hers was the only one I could stand to eat. Others... the texture scared me off, which is weird, because I eat SEAWEED SALAD. Grandma put broccoli in hers.

I also like 'em with some ground beef in them. My mom called that "fritata" because that was the name in the cookbook we found it in gave it. I haven't seen other fritata recipes like it, though.

My mom made chili relleno casserole similar to this but with green chilis, olives and tomatoes

Broccoli is great with eggs.

The difference for me between casserole and frittata is that I bake the casserole and make a frittata in a skillet. And I add a few different items into them.

BTW - I love seaweed salad!

That sounds wonderful! I've really been getting into Mexican food since our vacation in Arizona. Even spent a weekend curing and seasoning a molcajete. It mashes up the best guacamole and salsa. Yummy!

XD It's so tasty to me, but many say that the texture eeks them out.

It is kind of slimy, but boy the taste is out of this world.
