Potato pancakes are awesome, I am the weirdo in my house that tries to put bacon and cheese in them though…

The last time I had potato pancakes, I used a latke mix to make 'em.

They are very time consuming when you make them from scratch, but yummy!

Never thought about adding cheese or bacon to them. hmm.... That could be good, although it seems like it would taste more like a pierogi than a potato pancake that way. ;-)

This recipe was handed down from my Great Great Great Grandmother and is more than 200 years old.

6 starchy potatoes
6 eggs
1 medium onion
1-2 TBS flour
pinch of salt

Grate potatoes and onions and combine. Beat eggs until lemon colored and add to potato-onion mixture with salt. Add only enough flour to hold mixture. (Mixture will be thin.) Pour on hot griddle and fry until edges are crisp.

Before I found where I put the above recipe, I found another one online that looks intriguing to me. This one is a lot less eggy and the sour cream sounds like it would add a nice bit of flavor.

I think I tried to make one with powdered potatoes...not advised.

They are a little different than hash browns, which only have shredded potatoes. The consistency is different and the addition of the eggs, onions and sour cream (if used) adds more depth to the flavor.
