I love egg casseroles - egg, cheese, milk, mushrooms, scallions, and maybe a little red pepper all mixed up and baked in the oven. It's quick and easy and feeds a whole bunch of people.

I like salted steamed eggs smashed to perfection inside a bowl.

Egg Frittatas are really tasty too.

Reminds me a little of my grandma's quiche. Hers was the only one I could stand to eat. Others... the texture scared me off, which is weird, because I eat SEAWEED SALAD. Grandma put broccoli in hers.

I also like 'em with some ground beef in them. My mom called that "fritata" because that was the name in the cookbook we found it in gave it. I haven't seen other fritata recipes like it, though.

My mom made chili relleno casserole similar to this but with green chilis, olives and tomatoes

Broccoli is great with eggs.

The difference for me between casserole and frittata is that I bake the casserole and make a frittata in a skillet. And I add a few different items into them.

BTW - I love seaweed salad!

That sounds wonderful! I've really been getting into Mexican food since our vacation in Arizona. Even spent a weekend curing and seasoning a molcajete. It mashes up the best guacamole and salsa. Yummy!

It is kind of slimy, but boy the taste is out of this world.
