Today my mommy and I made alfredo. We kinda burnt the bottom a tiiiiny bit, but I couldn't really taste it. My mom could though, and dumped a bunch of cajun seasoning on her portion. I only added a little cajun. :B

I made a pot roast and put a TON of veggies in it -- leek, onion, potato, fennel, parsnip... I wanted to put carrots and celery in but they had gone bad. :( Unfortunately I made the broth that it cooked in a little too weak, so it turned out a bit bland, but it was nothing a little salt and pepper couldn't fix. My parents are visiting and they loved it, and my wife and I did too.

My son, on the other hand, started whining and crying that he doesn't like it an hour before it was even done cooking. *sighs deeply*

I made frozen pizza and italian sausange with peppers and onions.

I didn't have any white wine so I substituted apple juice.

Vegetarian tacos sounds like the best! I had a light dinner of bread dipped in olive oil and balsamic vinegar, and veggies with spinach dip.

it's great!

I've missed tacos ever since I became a vegetarian, but we decided to try vegetarian ground beef substitute and it works pretty well.

I too usually use rice and beans because I don't buy meat substitute often. But when it's around, I won't complain. But if I didn't purchase it myself I might eye it suspiciously until someone reassures me it's not meat. xD
