You can hard-boil an ostrich egg but it usually takes almost two hours to do it. I had a friend growing up that raised ostriches and we made a HUGE deviled egg once.

How they taste depends on what the bird eats, but to be honest other than size and color there isn't a huge difference between ostrich and chicken eggs. They taste almost identical. If you had them scrambled you probably wouldn't even realize.
Turkey eggs have a higher yolk to white ratio than chicken ones apparently, so they taste similar but are good for custards and creamier dishes according to an article I found. Yeah, fish eggs don't do well cooking from what I understand. |

There was a lady that would bring some to the farmer's market here every once in a while, but they were ten dollars a dozen, so I never tried them. Apparently turkeys only lay eggs about once a fortnight instead of every day like chickens.
