There's lots of rumors. If we were to post all the rumors we wouldn't stop talking about it until the game was released.

Eevee evolves to adapt to the environment basically. But we don't know if the creator will make all types. (It also doesn't make sense for the rumor ninfia is normal type because why would eevee need to adapt to something it already is?)
it makes sense for them to stretch it out because! Eevee is the "most" popular pokemon. They use new evolutions to draw fans back in. So why would they release them all at once?

If they make enough games im sure they will get around to making all types for eevee. But if they don't do that they might only have a handful of types for eevee ^^

Gen 1, Gen2 and Gen 4 had eevee evos. Gen 3 and Gen 5 didn't and those woulda been a good time to add steel, and possibly the rock/ground/fight types.

How can you tell if something is a default colour rather than a special colour? The herding rule says that all special colours will be set back to default. Would it be the colour shown in the egg map?
