Oh it certainly isn't. No gluten makes baked good really...fragile usually.

Yup. Really crumbly instead of fluffy.

It's tricky to do but there are ways to make them fluffy and not crumbly. I don't remember how though :/

That sounds familiar too. It's been a long time since I've been around it, since i'm not gluten sensitive, but my ex's mom would make that kind of stuff. She got pretty good at it too.
