The bowl demons are... especially weird, yes. They're not meant to be used as monsters at all -- Chickenbowl's active is a Healer type bonus, despite it being pure Devil type.

Phantom Chaser on the other hand is reasonably useful early-game.

My Christmas Archangel is going to be my first +297 monster, and it looks likely that my dark Fagan will be my second. I'm giving the eggs that don't fit on those two to Summer Pandora.

Hold on to her. She'll be useful later as a mid-game monster. Admittedly the normal Hera-Ur is better but she's also substantially harder to get and takes way more effort to level up and evolve.

Yes, absolutely! Mid-grade monsters have a role in the game beyond just skilling up harder-to-get monsters.
