So can certain octopi!
But as for a legit rainbow lookin' deep critter, comb jellies are pretty neat. They make rainbow lights in order to move around. x}

Aren't they? :D They're probably the closest to alien animals earth will know about. Like, the Nautilus, that has had little change in it's evolution, and the gulper eel is mega weird-lookin', also polychaete worms are pretty ancient I think.
