Yeah my chef was telling me he thought it was just a 'suggestion' but the inspector came in and saw that the cheesecake crust was made from cookie crumbs from a brand of cookie with trans fats in them and they got marked on it and the inspector said he'd be back in 6 months to make sure they changed it.

That's what they get paid to do though. xD They look at your recipes and any items that are prepackaged they look at too just to make sure it doesn't have anything it shouldn't. Like Cocaine or something, lol.
